The primary difference involves the moisture content, flavor density, and shipping efficiencies:

  • Guava Puree: Made by washing, de-stoning, and finely milling whole ripe guavas through screens to remove the hard seeds while retaining the natural pulp. It features the fruit's native moisture, offering a smooth, spoonable texture and vibrant aroma. It is the industry standard for tropical nectars, smoothies, and dairy preparations.

  • Guava Puree Concentrate: Produced by gently evaporating a portion of the water content from the standard puree under a low-temperature vacuum. It delivers a much higher density of fruit solids, natural sugars, and intense tropical flavor in a smaller volume, making it highly cost-effective for international shipping and cold storage.

Guavas naturally contain exceptionally high levels of native pectin and insoluble dietary fiber - which are largely responsible for its viscous nature. When processed into a puree, these natural fibers and pectins create a thick, full-bodied viscosity and excellent natural opacity.
