They have a unique structure, with tiny seeds (achenes) on the outside rather than inside the fruit. The modern commercial strawberry (Fragaria × ananassa) has a relatively recent and remarkably cosmopolitan history compared to ancient orchard fruits. Clarified and evaporated under a low-temperature vacuum to typically 65° Brix, this format strips out water weight to optimize international shipping and sub-zero storage logistics. It serves as a highly efficient, naturally sweet, and vibrant red acidulate base. It is widely utilized across the beverage sector to provide a robust berry undertone in multi-fruit juices, sports drinks, and flavored syrups, as well as acting as a clean-label coloring and flavoring component in confectionery items like gummies and hard candies.

When a formulation demands the authentic body and mouthfeel of the whole berry, strawberry puree and strawberry puree concentrate are the industry standards. Strawberry puree is produced by gently crushing and de-seeding (or partially de-seeding) the ripe fruit, preserving its natural insoluble fibers, pulp, and deep red opacity. This smooth, viscous format is highly sought after by the dairy industry for fruit-on-the-bottom yogurts, ice creams, and kefir bases, as well as by beverage manufacturers for premium smoothies and artisanal cocktail mixers.

When the visual identity and physical structural integrity of the whole fruit are paramount, Individually Quick Frozen (IQF) strawberry formats (which are available as whole berries, halves, or precise slices) are utilized. By flash-freezing the fruit at ultra-low temperatures, processors ensure that ice crystals do not rupture the delicate cellular walls of the berry. Upon thawing, IQF strawberries retain their bright crimson color, shape, and a firm, juicy bite. The primary difference lies in the retention of the fruit's structural solids and fibers:

  • Strawberry Juice Concentrate: A clarified liquid produced by removing the pulp, seeds, and water under a low-temperature vacuum. It is a highly efficient, space-saving format (typically 65° Brix) used primarily as a natural sweetener, flavor enhancer, and clean-label red coloring agent in clear beverages and candies.

  • Strawberry Puree: Made by gently crushing the whole fruit and passing it through a fine screen to adjust seed content while retaining the natural pulp and insoluble fibers. It provides a rich, opaque red color and full-bodied mouthfeel, making it ideal for smoothies and dairy preparations.

While both formats contain the natural fiber and pulp of the berry, they serve different moisture and density requirements:

  • Strawberry Puree: Possesses native fruit moisture, offering a smooth, spoonable texture. It is the industry standard for fruit-on-the-bottom yogurts, ice cream ripples, baby food pouches, and premium cocktail mixers.

  • Strawberry Puree Concentrate: Puree that has undergone gentle evaporation to remove a portion of its water content. It provides a much more intense berry flavor, higher sugar solids, and natural pectin density per volume. This low-moisture format is perfect for bakery fillings, fruit bars, and confectionery pastes where water activity must be minimized.

Strawberry Essence is a water-soluble, crystal-clear liquid captured during the initial evaporation phase of juice concentration. Because strawberry aroma molecules are highly volatile and heat-sensitive, they vaporize first. We capture, condense, and fractionate these vapors into a pure aroma.

  • It delivers a powerful, "fresh-picked" strawberry fragrance without adding any sugars, calories, or colors. It is widely used in sparkling waters, hard seltzers, clear spirits, and cosmetics, or to restore the authentic aromatic top-notes to standard juice blends.

IQF (Individually Quick Frozen) strawberries are whole berries, halves, or dices that are flash-frozen at ultra-low temperatures on a specialized conveyor belt. The rapid freezing process prevents large ice crystals from tearing the delicate cellular walls of the berry.

As a result, when thawed, IQF strawberries retain their bright crimson color, shape, and distinct structural bite instead of turning mushy. They are the premium choice for retail smoothie kits, breakfast cereals, oatmeal inclusions, and ready-to-bake pastry fillings.
